It’s a testament to how much we pour into these festive preparations – quite literally, in my case, to the point of a spectacular back spasm.

Yesterday, our home was filled with warmth, laughter, and the irresistible aroma of countless homemade delights. We hosted a cookie swap that was nothing short of perfect. Enough wonderful people arrived, including a delightful set of five-month-old twins, to perfectly fill every nook and cranny of the house. Every glass and mug found a purpose, and somehow, we managed to display an astonishing array of cookies without a single struggle for surface space. It was a beautiful celebration of community, creativity, and the simple pleasure of sharing delicious treats. The air buzzed with excited chatter as everyone admired and sampled each other’s unique creations – truly a baker’s paradise.

However, amidst this joyous chaos, my back decided it had finally had enough. Perhaps it was a dramatic protest against the relentless baking marathon I’d been on. Leading up to the swap, I’d been working on a batch for the Upscale Bake Sale, another for the Swerve Christmas party on Friday night, a staggering fourteen dozen for another swap, and about five new varieties I was eager to try for yesterday’s event. The pain, subtle at first, quickly escalated throughout the afternoon, turning me into a hobbling, periodically moaning figure, much to the potential bewilderment of our festive guests. It was a bizarre contrast to the cheerful atmosphere.

The severity of my back pain meant I tragically missed last night’s party altogether. I found myself in an unfortunate state where sitting, standing, lying down, curling into a fetal position, or even breathing comfortably, felt impossible. My incredible husband, Mike, became my hero, delivering the jarred cookies I had yet to decorate and label to the party. This morning, he even had to rescue me from the bathroom and, in a truly touching gesture, brought me coffee in our little one’s old sippy cup. Such is the current state of my recovery, slowly navigating the world from a peculiar arrangement of pillows and heating pads, heavily reliant on painkillers.

This rather dramatic personal update explains why I haven’t been able to make it to my desktop to upload all the fantastic photos from yesterday’s cookie swap. The thought of sitting at a computer feels like a daunting mountain to climb right now. But I couldn’t leave you empty-handed! So, to tide you over, I’m sharing one incredible recipe that perfectly encapsulates the sweet-and-salty bliss we all crave: these chewy, chocolate chip cookie-like bars, magnificently topped with bashed pretzels “glued” on with a luscious blend of chocolate and peanut butter.

Chocolate Peanut Butter Pretzel Bars Recipe

These bars are an absolute crowd-pleaser, combining the best elements of a classic cookie bar with a delightful crunchy, salty twist. The rich chocolate and creamy peanut butter topping, studded with crunchy pretzels, creates an irresistible texture and flavor profile that will have everyone reaching for more.

Ingredients for the Cookie Base:

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup packed light brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 ½ cups semi-sweet chocolate chips

Ingredients for the Topping:

  • 1 cup semi-sweet chocolate chips

  5. Combine Wet & Dry: Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Do not overmix.
  6. Fold in Chocolate Chips: Gently fold in the semi-sweet chocolate chips until evenly distributed throughout the dough.
  7. Press into Pan: Press the cookie dough evenly into the prepared 9×13 inch baking pan. You might find it easier to do this with slightly damp hands or a spatula.
  8. Bake the Base: Bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted into the center comes out with moist crumbs, not wet batter.
  9. Prepare the Topping: While the bars are still warm (right out of the oven), combine the chocolate chips and peanut butter in a microwave-safe bowl. Microwave on high in 30-second intervals, stirring well after each, until the mixture is smooth and melted. This method, using equal amounts of chocolate and peanut butter, prevents the chocolate from seizing and creates a perfectly smooth, glossy mixture.
  10. Assemble & Top: Pour the warm chocolate-peanut butter mixture evenly over the hot cookie base. Spread it gently with an offset spatula. Immediately sprinkle the coarsely crushed pretzels over the entire surface, gently pressing them into the chocolate-peanut butter layer to ensure they adhere.
